I'm not sure about nominations and polls as far as this subject is concerned, but it definitely should have a thread of its own; if it takes off, I'll move it to the general videogame discussion section.
My personal favourites? Obviously, anything that Nobuo Uematsu touches is gold, and back in the day, I loved the stuff Yuzo Koshiro did for Sega (Game Gear Shinobi 2's soundtrack still rocks to this day), and Chris Hülsbeck work on the Turrican series.
Today, I still get goose bumps from Black's main theme by Chris Tilton and the ever brilliant Michael Giacchino, while for all the game's faults, the music for Metal Gear Solid 2's intro by Gregson-Williams is nothing short of brilliant. There's tons more, naturally (Bioshock, Mass Effect and Soul Calibur IV just to name a few), so feel free to discuss what music in what game you like the most.

I think 'Empty Houses' from Bioshock is my favorite. It's during the part of the game where the very sweet sounding German woman is talking about the little girls. She has such pain in her voice that the music just chills ya to the bone. At least, I think that's the scene. Fuck I need to play it all again.

The BAHRAM battle sequence in ZoE2 (http://www.youtube.com/watch?v=qU7M4DMlBlQ) holds a special place in my heart - blowing up mile-long spaceships, mechas swarming you everywhere, and kick-arse music: What's not to like? For a committee of composers, Hibino and his boys did a great job on that game; I've been whistling that theme all day long.
Also, I can't find the main theme from Black anywhere. Fuck.

I like a lot of the old school game sound tracks and the remixes that followed. For this reason Powerglove is awesome.

Link to the Past has some of the most consistently great music I've ever heard. From the title screen to the overland, from castles to random houses, there is rarely a section of the game that doesn't have solid music playing in the background.

Metal Gear Solid has an amazing score by Harry Gregson-Williams and other artists. Absolutely love it.

On top of that, just some memorable favorites would be Legend of Zelda: Ocarina of Time and the Grand Theft Auto series. World of Warcraft and the Blizzard series' had some memorable music also.
