Really depends on the car. Laguna Seca Blue on the M3 is amazing, so is dark cherry on the tahoe/suburban. For anything else, black or silver.

matte black is awesome but unless it's a factory special order the quality of paint may not be up to spec. so i guess basic black it is.

That's why you use a sealant and a million clear coats.
When I'm done building my bobber I'm going to paint it matte black with blue pin striping. Since this is a budget build, I'll most likely have the mag rims I already have bead blasted.

btw, i have a theory on picking a car if you wanna speed and lessen the chances of getting caught.
start off w/ what kind of car do old people drive. (think retirement florida or arizona). yup, a it's buick type of thing, usually gold-ish metallic champagne-ish type of a color. so i think it would be safe(er) to speed in a car that color. to keep the cop's eye fooled, it should continue to be a sedan. but a nice handling fast one. to me, w/ rear-wheel-drive and manual it comes down to only one make. bavarian auto. make it an m car for speed and handling, but downgrade the bumpers/bodywork to regular 530 level.
upgrade the brakes a bit (just the pads), and the tires, and you've got yourself a modern q car. hop in a left lane and tear it up. the end.
