BIG PIZZLE
01-09-2009, 11:42 AM
Ingredients
1 tablespoon olive oil (http://www.recipezaar.com/library/getentry.zsp?id=495)
6 garlic cloves (http://www.recipezaar.com/library/getentry.zsp?id=165), minced
1/4 teaspoon red pepper flakes (http://www.recipezaar.com/library/getentry.zsp?id=507)
salt & fresh ground pepper
1 (28 ounce) can crushed tomatoes (http://www.recipezaar.com/library/getentry.zsp?id=151)
3 cups water (http://www.recipezaar.com/library/getentry.zsp?id=459)
12 ounces ziti pasta (http://www.recipezaar.com/library/getentry.zsp?id=273) (3 3/4 cups)
1/2 cup heavy cream (http://www.recipezaar.com/library/getentry.zsp?id=361)
1/2 cup parmesan cheese (http://www.recipezaar.com/library/getentry.zsp?id=467), grated
1/4 cup fresh basil leaf (http://www.recipezaar.com/library/getentry.zsp?id=317), minced
1 cup mozzarella cheese (http://www.recipezaar.com/library/getentry.zsp?id=746), shredded
Directions
1
Adjust oven rack to middle position and preheat oven to 475.
2
Combine oil, garlic, pepper flakes, and 1/2 teaspoon salt in 12-inch ovensafe nonstick skillet and saute over medium-high heat until fragrant, about 1 minute. (If your skillet is not ovensafe, transfer the pasta mixture into a shallow 2-quart casserole dish before sprinkling with the cheese and baking).
3
Add crushed tomatoes, water, ziti and 1/2 teaspoon salt.
4
Cover and cook, stirring often and adjusting heat as needed to maintain vigorous simmer, until ziti is almost tender, 15-18 minutes.
5
Stir in cream, Parmesan, and basil. Season with salt and pepper to taste.
6
Sprinkle mozzarella evenly over ziti. Transfer skillet to oven and bake until cheese has melted and browned, about 10 minutes. Serve.

It is one of the few places that knows how to make manhattans/rob roys to perfection, and their presentation for said drinks are second to none. This italian deli here in town has triangles of baklava for like $2.50 a piece (I think $3.95 for two). They look good but I'm never in the mood for baklava when I'm in there for lunch. Baklava is like an after-dinner dessert that goes good with coffee.

All this burger talk made me want to impart a story from the local Hooters. While it's true that I do not go for the food (I go for boobs, beer, and sports), I did notice a change last week that they've made that makes for a hell of a difference in the taste of their basic, run-of-the-mill hamburger.
They used to pull pre-made patties out of the freezer and throw it on the grill to cook their burgers. Now, they tear off a hunk of refrigerated hamburger meat, weigh it, season it with what appears to be (and tastes like) some creole seasoning, then hand pat it out and throw it on the grill.
Now, this burger probably won't win them any awards, but it's a night and day improvement over the previous frozen burger patty. It's almost good enough to justify a trip there just for a burger and beer alone.

Sodium is not a big deal unless you have vascular diesease, high blood pressure, or heart failure.
Well you have proven you have no clue what you are talking about. But I will rip your post apart anyways.
Sodium is needed in all diets, but only to a certain point. Excessive sodium, like 1300mg in a single sandwich is not good for you when you consider the other sodium you will intake throughout your day.
Why is sodium bad for you?
High sodium intake causes swelling and water retention. The only people who want that are bean poles like Claydon who couldn't put on a pound of muscle to save his life.
Taking in too much sodium can cause asthma, hypertension (high blood pressure), heartburn, osteoporosis, cardiac enlargement, ulcers, and edema.
So yes Claydon, if you already have those problems it will be worse for you, but if you have a high intake of sodium it can cause many complications and problems for your health. Plus it also makes people fat through water weight (one ounce of salt will cause a retention of 3 quarts of water, which is 6 pounds of extra weight)
So unlike Claydon has stated, high amounts of sodium is bad for you and in extreme cases could be fatal.
BTW Claydon, if you have heart failure eating is the last thing you are worrying about, getting your heart going would be much higher on the list of things to do.

But yeah, excess of anything wont be good for you and any sandwich with 1300mg of sodium is excess. If that were the only thing you ate that day you would be ok for sodium intake, but take into account everything else you eat and you are over doing it.

The 'anti salt' rage died off in the 90s (at least in the US). Again, sodium intake in a healthy individual is just not a big deal. Furthermore, your belittling comment about my FORMER profession, and my wife's current profession is proof positive that you are a d-bag. 1300mg sodium in a sandwhich is a shit ton, a person sitting on a couch and downing a gallon of water is not so great. A person working out, hiking, dealing with heat a gallon of water is nothing. Someone eating a 'normal' healthy diet eating 1.3g of Na in a sandwhich is no big deal. period.
Hoser
01-25-2009, 09:52 PM
It isn't anti salt, it is sodium in proper portions. Proper sodium intake is needed, but the key word there is proper.
Again, like I said eating a single sandwich with 1300mg of sodium is horrible. No one is going to go and just eat the sandwich. they will have fries with it as well. Right there they are over 2000mg easily. Then add in everything else they eat in a day and you can begin to see how high their intake will be. To get rid of all that salt they are going to have to sweat out a lot.
And yes, someone who sits on a couch all day doing nothing better be brining in sub 1500 cals along with low levels or sodium, complex carbs (hell carbs in general if they don't move) among other things.
BTW I wasn't belittling it, I know how in depth vet work can be, and my sister is in school to be a vet tech (I assume that is what you were), it was just the easiest way to get my point across. I also have no clue as to what your wife does, nor do I care. If we were going by our better halves profession I would be an expert on skeletal structure and be making 200+k per year, but that is her, not me.
And a no "normal healthy" diet would consist of a sandwich containing that much sodium.
I am not saying that someone who eats this stuff is a bad person, or will balloon instantly by eating it. Hell, once a year I have a double quarter pounder or if I am really drunk will have a couple double cheeseburgers. But I am not fooling myself into thinking I am having a healthy meal if I have a chicken sandwich from any fast food place.
I just wanted the guy to know that whoever told him this sandwich was good for him was misleading him.

Ingredients
1 boneless rib eye steak, 1 1/2-inch thick
Canola oil to coat
Kosher salt and ground black pepper
Directions
Place 10 to 12-inch cast iron skillet in oven and heat oven to 500 degrees. Bring steak(s) to room temperature.
When oven reaches temperature, remove pan and place on range over high heat. Coat steak lightly with oil and season both sides with a generous pinch of salt. Grind on black pepper to taste.
Immediately place steak in the middle of hot, dry pan. Cook 30 seconds without moving. Turn with tongs and cook another 30 seconds, then put the pan straight into the oven for 2 minutes. Flip steak and cook for another 2 minutes. (This time is for medium rare steaks. If you prefer medium, add a minute to both of the oven turns.)
Remove steak from pan, cover loosely with foil, and rest for 2 minutes. Serve whole or slice thin and fan onto plate.

i like to mix different spices in a mortar and pestle and add a little olive oil to make a paste and then rub it all over whatever meat i'm cooking and then let it chill in the fridge for a while. makes for some tasty meats.

i think i remember limp saying he salts his grilled meats after he pulls them off the grill while their resting.
I think that is the way to go.
if you like salt, use it. just remember itll dehydrate the meat. if you dont need the juiciest steak, youll be fine salting.
Yep.

you guys aren't entirely accurate. salting meat about 15 minutes before cooking will indeed dehydrate it.
however, the goal of the salt is to help break down the protein strands so that the meat is more tender, not because it needs to be salted for taste. basically if you salt 15 minutes before, you will indeed draw out the water and dehydrate the meat. however, if you salt your meat and wait at least a half an hour, then the liquid that started to come out of the steak will start to be reabsorbed and go back in, giving you the best of both worlds.

Blablabla, I've salted steaks right before, overnight, one hour, two hours, right out the fridge, at room temp... if you cook it properly it is not really going to matter. I hardly believe that any of you slobs have a palate that can differentiate whether or not a steak is too dry because it was salted overnight or just because you fucked it up on the grill.

Not exactly an even comparison. If you want fish sticks and breaded shrimp you go to LJS.
The best part about LJS is the hushpuppies, they are delicious.
While not the best seafood anywhere, I don't have any qualms about the food at Red Lobster. I actually ate there last Saturday and had the Hawaiian grilled shrimp with a Salmon steak.
It was pretty damn tasty.
