nah...... however i think severe food poisoning is in order. I picked up 2 pounds of ground pork for a dish I want to make. Never actually seen ground pork minus when it is seasoned and in the form of sausage.

i have never seen ground pork other than sausage at the local supermarkets. i found it at 99 ranch, right next to the bin of fish heads.

bleh! i wouldn't buy it that way, i prefer it fresh ground. At the local markets here they have turkey, beef, and chicken but no pork.

DAMN i should have purchased duck while i was there! shit!

yeah the three nearest grocery stores to myt place have those packages, but theyre not hormel or some other prepackaged brand. they like, grinds it in the sto.

fresh ground is actually safer, if you are going to get food poisoning from meat it will more likely than not be from ground meat. Steak etc is for the most part 'sterile' due to the fact that is a slice of muscle as opposed to whatever being ground up.

outback, for the price...is not too shabby. If i do not want to cook and i want steak but do not want to spend a lot of money then I go to outback.

I've only been once. I think I liked it too. But the Keg is really good for steaks, It's a bit overpriced - but I keep going back for their creamy mashed potatoes.

If you're going to spend $25 for a steak, and a few veggies at a chain like that, you might as well buy some nice filets, bring them home and do them yourself. You'll get a much better cut of meat, and probably cook it better as well for less money. Do that most of the time, and then when you want to go out and treat yourself to a nice steak, hit up your local steakhouse, or get to a Ruth's Chris, Morton's, or even a Flemings if you've got one near you. Those places are the exception to the chain restaurant food quality rule.

i get the same feeling but have begun to realize it's b/c i tend to inhale it incredibly fast.

my guess is it has to do w/ the fact that it's all 'ready to go'. no cutting and very little chewing needed

Agree to disagree, but that's the point. You may be able to get more steaks at the inferior place, but where's the enjoyment. Make them at home (which are better than one you'd get from a cheaper chain anyway), save some cash, and splurge on a better steak if you want to go out. A well cooked filet from most of the upscale chains will literally melt in your mouth, while a ribeye or strip from a cheaper chain is usually tough and just not worth it.

I think outback for the price is decent to be honest. The cuts are not fantastic, but they are reasonable for the price you are paying. Look, do not expect Mort's dry aged or anything. If you want to spend $90-$150 per person and have the best fucking steak of your life, go to a morts, or a club 21 or a Ruth Chris, if you want to spend $40 per person go to outback.

I keep getting almost that exact same coupon offer at Flemings ever since I went. Their tenderloin carpaccio was absolutely amazing. Best appetizer I've had at any restaurant, ever. Though the tuna tartare at Morton's is fantastic as well. I really with I had the dough to eat at those places more than once in a blue moon.

srsly, i've heard about wallmart being a popular hangout in the general americana, but damn, i wasn't prepared for what i saw! first of all, 11:30pm, huge parking lot, and i can't find a spot. closest one is like a 100yds from the store. second, inside, the aisles are packed w/ people hanging out by their carts, chatting. all over the place. and, they are clearly dressed up 'nice'. guess all the jokes i've heard were true.

I only go to Roadhouse when I have a $10 off coupon and a hankering for peanuts. They have this really good bourbon-marinated tri-tip, that's usually what I order from there.

i have a hard time with chain restaurants. my great aunt gave me a gift card to texas roadhouse one christmas and we just went to act like assholes since we couldnt spend it on alcohol. the only chain that i ever get a jonesing for is chilis buffalo chicken salad. i am really lucky. in louisville, we have A LOT of locally owned restaurants that are AMAZING.

I secretly wish we had more chain restaurants in town. In Corvallis, the only chains are Applebees and Ruby Tuesday (meh). The closest Chili's and Roadhouses are 45 minutes away, which is probably a good thing. We have lots of locally owned, overpriced, understaffed restaurants though.

I don't know where teh fuck you live but I can honestly say this is not the case for every Roadhouse. I've been to one in 3 states (5 in diff Texas Cities alone) and I can tell you I got a huge portion of food for what I paid. It was damn, damn good too. It's not like it's been years since I've had it either, I just had it Tuesday night. Now, I'm not saying ALL of their food is consistently good, I'm just saying I know their Fort Worth Ribeye is superb (along with their Bread and Chicken fried steak) and I get gobbs of sides.

My 'go to' place though is either Hoffbrau or The Butcher Shop (Downtown Dallas). Hoffbrau had 24oz Ribeye's for 20 bucks, though that changes with the Cattle prices of course.

I cooked 15 lbs of carne asada and 15 lbs of pollo asada for my Super Bowl party. I still cannot believe that it was all gone by the end of the night. i was hoping for some good left overs last week.

Big Pizzle, any trick to those wings, or any prep? Or have you just mastered cookign them? They look fantastic, would like to make them a significant part of my weekend diet.

They're really simple to make, the only trick is what you cook them on.

Take some wings and bread them with flour (mix the four with some cayenne pepper if you really like heat).

Preheat oven to 500 degrees. Put place them skin side up on a pan. (The trick is actually not to use a pan at all but to use that little grill contraption in the picture)

Put them in the oven for 40 minutes. They are going to smoke like a motherfucker so open windows and quarentine your kitchen. But dont touch them. Just keep an eye on them every 15 minutes (w/o opening the oven) to make sure nothing is going to explode.

After 40 minutes, flip over and then cook for another 15 to 20 minutes or until the edges get a little burnt.

Let them sit for 10 minutes and then cover in your favorite wing sauce. You can basically eat them plain or add different spices to the flour if you don’t like sauce, but the sauce makes them real hotwings.

The secret is that little grill contraption. I basically put a 14 inch grill on a 12 inch cast iron pan to catch all the grease. If you cook them in a regular pan or baking sheet, they will end up baking in their own grease and wont be nearly as crispy plus they'll probably stick to the pan. The grill allows the grease to drip away, leaving the wings really REALLY crispy, even after you cover them in sauce. I have truly mastered the hotwing.

If you cant put something like that grill contraption together, you can cook them directly on your oven grate with a pan underneath but this is going to be a huge hassle when you flip the wings because you have to pull the whole grate out and cleanup is going to be a bitch afterwards.

Every year my parents buy half a cow from one of their neighbors, and today they unloaded a bunch of cuts they never use on me, since I'm poor and all that.

So right now I'm looking at about 6 pounds of short ribs I have no idea what to do with. I figure I'll just throw them in a slow cooker with some wine and random veggies for a few hours. That's gotta be hard to fuck up, right?

This worked great for oxtails and I'm sure it will work great for beef shortribs too.

Two 750-ml. bottles dry red wine (preferably Burgundy)
12 large oxtail pieces (about 6 pounds total)
1/2 stick (1/4 cup) unsalted butter
5 shallots
5 garlic cloves
2 medium carrots
2 medium leeks (white parts only)
1 medium onion
2 celery ribs
3 fresh thyme sprigs
3 bay leaves
1 bunch parsley stems
about 4 cups beef broth



Preheat oven to 325°F.

In a 4- to 6-quart heavy saucepan boil wine until reduced by about half (about 3 1/4 cups). Trim oxtails and pat dry. Season oxtails with salt and pepper. In a deep heavy ovenproof kettle just large enough to hold oxtails in one layer heat 1 tablespoon butter over moderately high heat until foam subsides and brown half of oxtails on all sides, transferring to a bowl. Brown remaining oxtails in 1 tablespoon butter in same manner and transfer to bowl. Coarsely chop shallots, garlic, carrots, leeks, onion, and celery. Add vegetables to kettle and cook in 1 tablespoon butter over moderately low heat, stirring, until softened.

Arrange oxtails over vegetables and add reduced wine, herbs, and enough broth to just cover oxtails. Bring liquid to a boil and braise oxtails, covered, in middle of oven 3 to 3 1/2 hours, or until meat is very tender but not falling off the bone. Transfer oxtails with a slotted spoon to a bowl and keep warm. Pour braising liquid through a fine sieve into a large saucepan and discard solids. Boil liquid until thick, shiny, and reduced to about 1 3/4 cups and whisk in remaining tablespoon butter.

Serve oxtails and sauce with celery root puree or mashed potatoes.

what you are failing to comprehend fat boy is that the food that was prepared and served to us is basically a piece of art. The executive chef there attended the Culinary Institute of America in Napa for about 5 years, and worked another 10 years in various establishments in New York and Houston before landing a gig at Geofferys. So yah, my food was designed and prepared under the supervision of a master and YAH I WILL TAKE A FUCKING PICTURE OF IT.
