btw, claydon, fail for going w/ chicken. what's the occasion for such a fancy lunch?

That's the first thing that came to mind when I saw the post...who goes chicken picatta at a restaurant like that? At least go veal picatta if you've got a hankering. Waste of a good opportunity to have a truly great meal when you settle for something that really can't be great. The baked brie looks awesome though...

the chicken picatta was excellent, however I have already clearly stated that I did regret getting that when I saw the ahi. Speak with 6655321, picatta and the more old school dishes are back in a big way.

i'm going to do up some ribeye tonight...also got a pork shoulder that i'll be throwing in the crockpot before i go to bed

the pulled pork came out awesome last time, i did that in an afternoon. i'm hoping that by doing it on low overnight that it will be that much more delicious. also going to try playing with the sauce a bit.

so i threw in the pork shoulder with some onions, garlic, worcestershire, brown sugar and bbq sauce at around 11:45 pm last night.

11 hours later shit is fork tender and fall off the bone (as you can see when i grabbed the bone it just came right out):

It's my night to do the sunday dinner.
This is no fail and goes beyond the usual roast/potatoes fare.

Sweet & Sour Chicken

1lb boneless pork or chicken cut into cubes
1 pepper cut into 1' squares
2 carrots peeled and cut into thin 1'strips
2 onions peeled diced
1 can pineapple cubes in juice not syrup, strain juice out but keep it
4 tbs vinger, cider is nice
4 tbsp ketchup
5tbsp cold water
3 tsp cornflour
1tsp salt or not
1 tsp oil

fry meat in a little oil 'til light brown, bout four mins.l
remove meat, drain on kitchen towel
heat two tsp of oil until hot
cook carrots in oil for 1 min
add onions cook for two
add pepper 1 min
add pineapple 1 min.total five minutes!

Pour in sauce, cook until thickened, stir slowly all the time.
add meat and stir well.

This is so simple it doesn't count for a sunday dinner in my opinion but im cut for time. Would like to find some impressive roast recipes and side dishes and take the time to create it.

really?? they seem like they'd be easy, therefore boring, to cook. esplain:

they are really easy to cook if you know a few simple things. i've seen people fuck up searing them left and right. always make sure they are thoroughly dry before searing and only salt and sear one side. then finish them in the oven. i cook mine to medium/medium well, after that they turn to rubber. they're a foolproof dish to have on any menu and if it gets really busy you can throw them together in a flash. plus i love eating the hell out of them, especially with crab remoulade and beurre blanc.

oven at 350, rinse your rice til water is clear, follow the whole 2 to 1 ratio, 2 cups water, 1 cup rice. just bake it covered until all the water is absorbed, let it rest for 5 minutes and fluff. i guarantee it will be perfect every time. the main thing with rice is not to stir it while it's cooking, it makes it starchy and you get clumpy rice instead of individual kernels.

Only if you have no access to a smoker or if you don't have the time.

I just made ribs on a buddies gas grill on Saturday. The people that got there after they came off the grill never knew. Babyback pork ribs only BTW....

Boil them in a large pot with water and brown sugar until the meat starts pulling from the bone (1.5-2 hours depending on heat and size of ribs)
Then put them on the grill for 30ish minutes basting BBQ sauce on them every time it caramelizes. I always mix some brown sugar into a hickory BBQ sauce when I do it this way.

Also if you have a gas grill, get a wood chip smoker. Makes a HUGE difference.

Nope, actually it doesn't. Cooking with gas this way, a smoker box makes a HUGE difference though.

I was just going by what I have heard. Everything I read said it makes them tender, but remove flavour.

Anyways I went with 5 hour oven and liquid method.

Oven at 265, ribs on middle rack, bone down with 3 cups water, 1 cup OJ and 1/4 cup soy in a pan on the bottom rack. I will bast at 1 1/2hours and again at 3, then add my sauce at 3:45.

OK, let me explain what water does to meat. There is a certain degree of osmosis that takes place when you boil meat in water. This is accelerated if you use even a little bit of salt in the water or on the meat. In essence, what happens is . . . the water goes in and the flavor of the meat goes out. If you doubt this, taste the water after you have boiled something in it. This is the whole concept behind making soup. So, when you boil your ribs, all that wonderful pork flavor comes out (notice how greasy the water is?)

I like picking up the bone with meat on it. If I didnt use the knife it would all just be on the plate as it was falling off the bone. They cooked for almost 5 hours.

I took a pan (2 inches deep), took 3 cups water, 1 cup OJ and about 1/2 cup Soy, put it on the 2nd rack from the bottom and then took a smaller rack from my toaster oven and put the dethawed ribs on that on top of the pan. I rubbed The Keg (http://en.kegsteakhouse.com/products/seasonings) seasoning on it. Then I put it in the oven at 270 for 5 hours. At 1 1/2 hours and 3 hours I took a ladle and basted the ribs. At 4:40 I turned the oven off and put Wicked Gourmet - Smokey BBQ Sauce (http://www.wickedgourmet.com/detail/smoky_bbq_sauce.php?PHPSESSID=93c7f0b4ca5200aea53e b6bc02a4b4bd) on and let it sit in the warm oven for another 20 minutes.

Some of the best ribs I have ever had.

i usually skip the ribs and go for brisket at most bbq places. the big place here, rendezvous, just puts plain ass pork ribs on a giant rotating smoker and then cooks them for hours while spraying them with water from a hose. then they dust em with some nasty ass dry rub that tastes like straight chili powder. ribs are done when you grab them with tongs and hold them up and the meat relaxes but isn't falling off the bone.

ok, so most of those are some of the nicest restaurants in boston. for two weeks, they have a special prix fixe menu, depends on whether they offer lunch and dinner but lunch is 2 courses/$22 and dinner is 3 courses/$33. essentially ridiculously good food at a very reasonable price.

All the restaurants got reserved by Monday afternoon for the whole week, and the only prix fixe was a $10 "Chef's Choice" plate at each restaurant which consisted of basically appetizers. We went to seafood restaurant and had to buy extra food...what was supposed to be a cheap night out ended up costing $45.

Yeah, because you live in a real city that has real prix fixe deals, not a small town that thinks it's Portland. The economy of Corvallis makes no sense to me. Everyone that works here makes peanuts yet everything costs big bucks.

It is for my dad's birthday dinner tomorrow night, should be fantastic!

the roast was in-fucking-credible. 3 hours at 325F, it was tender and rich with the flavor of salt, rosemary and garlic.

The missus set up the table fairly nice. The duck decanter had a fantastic pinot from windward winery 2004, and the Syrah decanter had a fantastic napa valley syra from 2001.

I figured it would be like Panda. I went inside and everything was in small batches so I figured it would good. I tried the orange chicken and it was good. Everything else was nasty and the chow mein tasted like someone blew their nose in it. Plus the fortune cookie tasted like toothpaste. I am not looking forward to the next few hours.
