Ugh, I went to BJ's brewery for lunch, but wasn't that hungry. I just wanted a pale ale, but decided to order a salad. Fucking bleecch. Their vinaigrette tasted horrible and there were artichoke hearts in it. They have no place in my salad. Thumbs down

jeri nailed it, i'm the sautee/grill guy, the other guy prepares the sides: risotto, dauphinoise, pomme puree, etc. then it's a team effort on the plating.

never had an oyster shooter, but steamed oysters shucked at you table at a quality seafood restaurant are awesome. scallops and huge ass shrimp are great too. best tasting fish is grouper.

I've never had grouper. There's a fish place near my work and they sell grilled ahi tuna with rice and salad for like $10. It's great for lunch.

Meh. First off, those chops werent grilled. They were on a cast iron skillet. Nevertheless, when you grill thick meat like chops or steak you want the cooking surface above 400 degrees. You want a crust to develop on steak/chops. That's the whole point of grilling, the sear. If the meat is just cooked without any sort of crust, you dont have enough heat and your bbq sucks, you might as well bake like a woman. I dont care how often you grill or who co-signs for your skills, me > you. Those chops were perfect bitches.

There was a big controversy in the state of florida where restaurants were caught offering grouper that was actually NOT grouper. Apparently it is in high demand and short-supply:

LEE COUNTY: Just months after ABC7's exclusive investigation into restaurants serving bogus grouper, the ABC7 Whistleblower went back to see if Gulfshore restaurants were serving the real deal. We took new samples from the same restaurants in the first investigation and retested them. Once again, ABC7 found bogus grouper.

ABC7 first exposed the problem of bogus grouper in November. Out of 8 randomly selected Gulfshore restaurants, half failed the grouper test and one couldn't be identified.
Instead of Florida's favorite catch, we were served everything from emperor fish to Asian catfish.
Most restaurants who failed, said they turned things around by altering menus or changing suppliers. Did it make a difference?
We ordered the same grouper dishes from the same restaurants, packed them up and shipped them to Therion International, an independent animal testing lab in New York. The lab has done DNA testing for U.S. Fish & Wildlife, the National Institutes of Health and the Smithsonian.
The results? Parrot Key Grill, Pelican Larry's and Watermark Grill all passed.
The samples from Tommy Bahamas and Shrimp Shack, restaurants that served us emperor fish three months ago, raised even more questions. Each sample came back undetermined.
Therion International Lab Manager Will Gergits insists while the sample couldn't be fully identified, what we sent wasn't from the grouper species.
"Bottom line, it's not grouper," said Gergits.
As it turns out, there is more bogus grouper in Southwest Florida than anywhere else in the state.
ABC7 dug up state inspection reports from 2006 that show out of more than 100 Florida restaurants cited for serving bogus grouper, nearly 30 percent came from our area of Florida.
At a seafood convention in Orlando last month, the FDA announced it is taking the issue of fish substitution very seriously.
"A federal agency has to be involved or the influx of un-inspected product will continue to come in at an ever increasing rate," said Bob Jones of the Southeastern Fisheries Association.
A genetic database is in the works that would eventually catch fakes using a handheld device, but until then, the battle continues to make sure the seafood you order is what lands on your plate.
Tommy Bahamas stands by their grouper sandwich and their supplier, SYSCO. They issued the following statement:
"There are many species of grouper and SYSCO is currently conducting independent testing to determine the authenticity and origin of the grouper they have supplied to us."
As for Shrimp Shack, the owners state "Anova Foods of Miami furnishes an FDA approved DNA test certifying that the product is grouper."
Because our second round of testing came back undetermined, ABC7 made the decision to test additional samples from Shrimp Shack and Tommy Bahamas. We expect those results next week.
Since our investigation first broke in November, prosecutors have expanded the investigation statewide. If a restaurant is found substituting fish, fines can be up to $5,000.

Jasper’s Pan Roasted Lobster. The lobster is cut into 6 pieces then seared and pan roasted with a white wine, bourbon, chervil and chive deglaze. The sauce kept the lobster moist and tender. A nice, but subtle flavor. Quite messy, but then what do you expect when you eat lobster.

i've had my ass handed to me at work lately. we did 5k in sales in the matter of 2 hours the other night, needless to say, that shit was bananas. i got a busy ass week ahead of me, at least 2 60 top wine tastings within days of each other, and only 1 goddamn day off for the next week or 2. :( hooray for overtime.

it's currently 4 guys in the kitchen including myself (executive chef, sous chef, sautee guy, and salad/dessert guy). i have not yet been to culinary school, but i've had the privilege of training with some good chefs over the years and have managed to pick up lots of info and techniques. i've also noticed that there's not much of a difference between a self taught cook that worked in some nice places and a culinary school brat that woke up one day and thought cooking in a restaurant sounded neat-o. one of these days, i do plan on getting a culinary degree.

i want to get into culinary school, but i'm not gonna waste my time at the second rate schools around here. it'd be pointless for me to go to cooking school at a community college. i've got almost 8 years of cooking experience so far, but culinary school would help me to make more money and maybe i'd get a little better with my flavor profiles.

one of my first kitchen jobs was at a gourmet pizza place that did fresh pastas and pizzas. i got to cook out of a wood burning brick oven, and the pizzas that would come out of that thing were amazing. i miss getting to experiment with making all different kinds.

Used this shit on some chicken breasts. Mixed it with some olive oil and balsamic vinegar, coated the chicken with the mixture and threw it on the grill. Side it with some corn and carrots and some dinner rolls and you've got yourself a fucking meal.

i think that people are more conscious of quality, so they tend to eat at "better" places which have a higher baseline price than say 10 years ago. You can still find a blue plate special for $4.99 here and there, but it's likely from a place that you wouldn't consider feeding the food to your dog.

there are definitely a few places that are still good value, some good happy hour specials, etc... but in my experience special has come to mean more often mean something that is not normally on the menu rather than a reduced price.

See and mine just upped everything. It's so hard trying to explain to customers why everything costs them more. And a local place I love that I will no longer go to just starting charging for refills on soda/tea and coffee. WTF? That's ridiculous and insane.

charging for refills kinda sucks, but we do it for the cokes at my place of work. it's the good glass bottle cokes though. you think most places would just raise the menu prices and leave tea and shit like that alone. beverages like that only make up a small percentage of the total cost of running the restaurant.

If you were paying $15, you were going to some trendy spot where they probably weren't even good.
