I've been getting meat from this place a lot recently and it has made for very happy grilling:

http://www.themeathouse.com/

Last night I grilled Burgundy Wine Steak Tips, Jamaican Jerk Turkey Tips, and Meathouse Marinade Chicken Breasts.

paired that stuff up with a Sam Adams Summer Sampler 12 pk. it was an excellent day.

I posted some stuff about Gordon Biersch in the Booze thread earlier today, but let me say that the bone-in ribeye I had there last night was f'n delicious. It was cooked medium and seasoned perfectly. I wish it wouldn't have been served on top of the garlic mashed potatoes, but it the portion was huge. The Southwest Eggrolls we had for an appetizer were pretty frickin' good, too.

Of course, 4 out of 6 beers on the beer sampler were rolling, as well.

That sounds amazing. It is. Their menu has the burgers broken down by weight and they go up to a pound. The patty for the pounder isn't that thick but it's about as big in diameter as a dinner plate.

mine

1 lb. ground sirloin
1 lb. dried beans (black beans and red beans) - soaked overnight
1 large yellow onion
4-5 garlic cloves
2 cans diced or crushed tomatoes
1 can tomato sauce
1 bottle of beer

seasoning
salt
pepper
ancho powder
chipotle powder
coriander
cumin
oregano
bay leaf
pinch of sugar
and just a little cocoa powder

i always season to taste so i have no idea how much i actually use of each seasoning.

I usually get cheesesteaks from Lenny's Sub Shop around here, not sure how far their franchise reaches, but they make a great steak sandwich. South Philly cheesesteaks was another chain around here that made a pretty decent one.

When you're a homosexual man in these modern times, it's very hard to discern your level of faggotry from other gay dudes, so a special few partake in decanting to showcase their penis sucking abilities.

Claydon

What is the point of decanting? Edutain me.

Modern filtered wines really do not need decanting as they do not have sediment (typically) in the bottle. However, young reds could do for a bit of 'opening up' if you will. Those reds that have a lot of bite to them, some call it acid ie the tannins. Young reds tend to be very high in tannins (most not all). Decanting can mellow them out a bit and open them up. You do not need to spend hundreds on a decanter, you can get a decent one for $40.

Young full-bodied red wines can benefit from decanting. When the wine comes in contact with oxygen, the aromas present in the wine are released. The decanter in this case should be a wide bottomed decanter. Wide body decanters provide more surface area for oxygen to allow aromas from the wine to be released.

Made something a little different tonight.... chipotle sauce grass fed burgers!

chipotle sauce:

1/2 cup brown sugar
3 chipotle peppers in adobo sauce
1 tsp of adobo sauce
1 tsp worcestershire
2 tbl sp orange juice concentrate
3 tbl sp molasses
1 clove minced garlic

puree in food processor

burger:

1.5 pounds grass fed ground beef 7% fat
minced shallots
1 tsp pepper
2 tsp kosher salt
1 egg

fry the patties in a cast iron skillet on high heat to desire (medium for the 2 of us), swiss cheese on top until melted, toasted buns, and smother the top of the cheese with the sauce.

good stuff

Butter sauce is pretty simple. I just stir some diced garlic with butter in a skillet till it starts to smell really good, then toss it with the pasta and a little shredded parmesan cheese, parsley, salt and pepper.

We had to use Oscar Myer roast beef because the deli closed by the time we decided we wanted French Dip for supper. It actually wasn't too unhealthy. 2 grams of fat per 6 slices of roast beef. Add in whatever fat from the provolone and it really isn't too bad.
