Obviously it depends on several factors. If you want a more flavorful cut of meat (though tougher), you would go with a race that uses its muscles more frequently. If you want a less flavorful, but more tender cut of meat, you would go with a race that lives (on average) a comfortable lifestyle with less muscle usage (think of Kobe beef, and those lucky Japanese Cows). Personally, I like my meat tender, so I would likely go with a nice upper middle class, suburban white female. Preferably slightly chunky, and aged around 18 years................

I do agree with Soup Nazi. Any game animal that is run hard, as in pursued, has a gamier taste to the meat. The acids build up in the muscle tissues. Then you have to soak and cure the meat for it to be worth eating.
