I went to a japanese restaurant once, the kind where they cook your food right in front of you... I thought I heard someone in my group say their policy was to cook steak no less than medium, so when it came time to order, I asked for mine to be done as rare as he could get away with... he dropped it on the grill for about 30 seconds, flipped it over for another 30 seconds, chopped it up, grilled it for maybe 10-20 more seconds and served it

For everyday quality and good price, Sam's has the best steaks. For those rare occasions when I want to spend some coin on prime beef, there are none better than Central Market, but it will cost you. Grill it with Allegro wet marinade and Tone's Canadian Steak seasoning - medium rare.

I like my steak as rare as I can get it. To me, there is nothing better than a supreme cut of beef, barely seared on the outside, cool in the middle, with all the flavor and juices intact and not destroyed by the heat of cooking.

I used to love it rare as possible without contracting some sort of disease, but have changed my tastes to medium to well done. Medium well, then.

Over time I guess I just started to find it unappealing when I stuck my fork into the steak and blood would ooze out. I think it started to remind me of stabbing hookers. And I don't mix work and pleasure.

Ive had good rib eye and new york in multiple places in the US, and I have to say that the rural areas ie the midwest (iowa, the dakotas, nebraska, kansas) love to burn the ever loving fucking shit out of steak.

I think liking it rare is more of city thing.

It all depends on where you go. If I'm hitting up Smith & Wolensky or the Chicago Chop House or Gibson's, medium rare. If it's Bob Chinn's Crab House, Pete Miller's or Wildfire, medium.

If it's an upscale steakhouse, I'll ask for Medium Rare Plus. If it's someplace shitty, the staff won't know what the hell you're talking about. It's a good idea to avoid steaks at the latter.

Medium rare is what I usually get unless I'm feeling spicy and get it rare. Well marinated and spiced of course.

this is a misconception. if you want a thick filet to be med rare all they way through you should pull the steak out about 35 min to an hour before cook time, you'll end up with a nice hunk of med rare all they way through the steak. most restaurants, however, will just pull the steak from a chilly fridge and toss it right on the grill, so yeah you will end up with a chunk of rare meat in the middle if they don't know how to cook a fuckin steak.

Agreed! Always pull the steak out of the fridge at least 30 min before grilling. I like my ribeye rare to med rare with a coffee/brown sugar/allspice dry rub. It's like buttah...
